Scrub (don't peel), top and tail, cook like a jacket patato, cool, remove thin skin, slice and serve with vinegar dressing

OR

Scrub, cut into quarters or smaller, combine with chunks of other root vegies and diced butternut/pumpkin, drizzle with olive oil and bake in the oven, course salt to taste
